Acorn Cookies

Ingredients

- 225g butter

- 150g brown sugar

- 115g finely chopped hazelnuts

- 100g crushed praline, chopped nuts or chocolate sprinkles

- 1 teaspoon vanilla paste

- 350g all purpose flour

- 1/2 teaspoon salt

- ½ teaspoon baking powder

- 200g dark chocolate

- pretzel sticks (chopped)

Yields - 60-70 cookies

Instructions

1. Preheat your oven to 180°C and line two baking trays with parchment paper.

2. In a medium saucepan, melt the butter over low heat, then remove from heat.

3. Stir in the brown sugar, 115g of hazelnuts, and vanilla into the melted butter, mixing well to combine.

4. In a separate bowl, whisk together the flour and baking powder. Add the dry ingredients to the butter mixture and mix until a stiff dough forms.

5. Shape each cookie by pressing the dough with your fist into teaspoons (use a regular teaspoon). Then slide the pretty oval shape cookie off the spoon. See instagram reel the method.

6. Arrange on the baking trays and bake for 10-12minutes, or until the edges are light golden brown. Transfer cookies to a wire rack to cool completely.

7. While the cookies cool, melt the chocolate in the microwave in short intervals, stirring in between.

8.  Dip the large end of each cookie into the melted chocolate, then roll in the preferred topping as suggested. Optional to add the pretzel sticks for the stalk.

9. Place cookies on the tray to set.
