Almond Croissant Cookie

Frangipane Filling:

Ingredients:

- 35g caster sugar

- 30g melted butter

- 1 egg

- 1 teaspoon vanilla paste

- 1/2 teaspoon almond extract

- 150ml ground almonds

Instructions:

1. In a mixing bowl, prepare the frangipane by mixing the sugar and butter together.

2. Add the egg and vanilla and almond extract, and mix again.

3. Gradually add the almond flour to the mixture, mixing until smooth and creamy.

4. Cover the bowl with plastic wrap and chill the frangipane filling in the refrigerator for at least 30 minutes.

Cookie dough:

Ingredients:

- 250g unsalted butter, softened

- 200g caster sugar

- 2 teaspoon vanilla paste

- 1/2 teaspoon almond extract

- 150g ground almonds

- 300g all-purpose flour

- 1/4 teaspoon salt

- Sliced almonds for rolling cookies

Instructions:

1. In a mixing bowl, prepare the cookie dough by creaming together the softened butter and sugar until light and fluffy.

2. Add the vanilla and almond extract, and mix until well combined.

3. Gradually add the almond flour, all-purpose flour, and salt to the mixture, mixing until a dough forms. Use your hands to bring together into a ball.

4. Preheat your oven to 180c and line a baking sheet with parchment paper.

5. Using scales measure between 50-60g cookie dough balls and 18-20g frangipane balls.

6. Roll and flatten a cookie dough ball and place a frangipane ball onto and wrap and roll.

7. Finally roll the cookie in a bowl of flaked almonds and place on the prepared baking sheet and slightly flatten.

8. Bake the cookies for 20-25 minutes, or until the edges are lightly golden brown.

9. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
