Autumn Thumbprint Cookies
Make your cookie decorating effortless with my No-Shrink, No-Chill Woodland Thumbprint Cookies! This recipe skips the dough chilling and still delivers perfectly shaped, buttery cookies every time. Customize them with simple thumbprints or get creative with fun designs like toadstools, flowers, and bears using everyday kitchen tools. Quick to make, even more fun to decorate—perfect for any occasion!
Ingredients:
- 113g unsalted butter (softened)
- 50g granulated sugar
- 50g soft brown sugar
- 1 tsp baking powder
- ½ tsp salt
- 1 large egg
- 1 tbsp (15ml) milk
- 1 tsp vanilla paste
- 240g plain flour
- fillings of your choice - jams, curd, chocolate
Instructions:
1. Preheat the oven to 190c and line a baking sheet with parchment paper.
2. In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.
3. Mix in the egg, milk, and vanilla paste until fully incorporated.
4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until just combined.
5. Roll dough into small balls (approx 35g), place them on the baking sheet, and press down with base of a glass.

6. Bake for 9-12 minutes or until the edges are lightly golden.
7. Once cooled, fill the thumbprints with jam, curds, chocolate, or hazelnut spread.
