Blossom Cookies

Ingredients:

- 100g unsalted butter, softened

- 30g cream cheese (philadelphia)

- 60g icing sugar

- 30g whole egg whisked

- 1 teaspoon vanilla paste

- 145g cake flour

- 10g cornflour

- pinch of salt

Decorating: Pink Gel Food coloring and melted chocolate, dragees and sprinkles of your choice.

Instructions:

1. Preheat your oven to 150c. Line baking sheets with parchment paper or silicone baking mats.

2. In a large mixing bowl, cream together the butter, cream cheese and icing sugar until light and fluffy.

3. Add Egg and Vanilla until well combined.

4. In a separate bowl, whisk together the flour, cornflour and salt. Gradually add this dry mixture to the butter mixture, mixing until a smooth dough forms.

4.Colour cookie dough in a separate bowl, take 1/4 of the cookie dough and colour in pink using a few drops of gel colour.

5. Fit a piping bag with a 2D piping tip. Use a angled spatula and spread the inside of the piping bag with a thin layer of pink dough. Then fill in the center with the uncoloured cookie dough. This will create the ombre effect.

6. Pipe the cookies onto the prepared baking sheets. Hold the piping bag vertically and squeeze to form rosettes or any desired shapes. (See instagram video on how to pipe blossom cookies) Leave some space between the cookies as they will spread slightly during baking.

7. Bake the cookies in the preheated oven for 5minutes for 150c, then reduce oven to 140c for another 10minutes or until the edges are lightly golden. Keep an eye on them as baking times may vary depending on your oven and the size of your cookies.

8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

9. Optional Decoration: If desired, decorate the piped cookies with sprinkles or other decorations. Enjoy!
