Chocolate Cookies
These tender, buttery cookie bites are filled with a surprise square of chocolate hidden in the center. With a golden finish and melt-in-the-mouth texture, they’re perfect for sharing or gifting — if you don’t eat them all first!
Ingredients:
– 250g unsalted butter
– 370g all-purpose flour, sifted
– 75g icing sugar, sifted
– 20g cornflour
– 2 egg yolks
– chocolate of your choice
For the egg wash:
– 1 whole egg
– A few drops of milk
Method:
1. Beat the softened butter with the sifted icing sugar until smooth and creamy.
2. Add in the egg yolks and mix until well combined.
3. Sift together the all-purpose flour and cornflour. Add to the bowl and fold with a spatula and don’t overmix.
4. Place dough in a piping bag and use a large basket weave tip like 1D (use the correct width according to the type of chocolate you use. Pipe directly onto a baking tray strips of cookie dough long enough to wrap it around a square of your favourite chocolate. Make sure the chocolate is fully enclosed. I used a knife to help lift and wrap the dough around the chocolate.
5. Turn the wrapped cookie around so the seam/join is at the bottom. Egg wash the cookies.
6. Bake in a preheated oven at 180°C for 8-12 minutes.until the cookies are golden yellow.
8. Allow to cool before enjoying!
