Guinness Chocolate Cupcakes

Celebrate St. Patrick's Day in true Irish style with a delightful twist on a classic treat! Indulge in the rich, velvety goodness of Guinness chocolate cupcakes, infused with the robust flavor of Ireland's favorite stout. Crowned with a luscious Baileys cream cheese frosting, each bite offers a heavenly blend of creamy sweetness and subtle notes of Irish cream. Ingredients:

Cupcakes:

- 45g unsweetened cocoa powder

- 125g all-purpose flour

- 250g caster sugar

- 3/4 teaspoons baking powder

- 1 teaspoon salt

- 2 large eggs

- 115g unsalted butter (melted and cooled)

- 1 teaspoon vanilla paste

- 170ml Guinness stout

Baileys cream cheese frosting:

- 120g cream cheese, cold

- 60g unsalted butter, room temperature

- 250g icing sugar

- 2 tablespoon Baileys Irish Cream liqueur

Decorate with berries of your choice (optional)

Yields: 9 muffin cases or 12 cupcake cases

Instructions:

1. Preheat oven to 175°C. Line a cupcake tin with paper liners.

2. In a bowl add the sugar, salt and sift flour, baking powder and cocoa.

3. Pour Guinness, eggs, vanilla and melted butter into dry ingredients and mix until smooth.

4. Spoon batter into cupcake liners, filling each about 2/3 full.

6. Bake for 20/25 minutes until a toothpick comes out clean.

7. Cool cupcakes in the tin for 5 minutes, then transfer to a wire rack to cool completely.

For the Baileys cream cheese frosting:

1. Beat cream cheese and butter until smooth.

2. Gradually add icing sugar until smooth and fluffy.

3. Mix in Baileys Irish Cream liqueur until well combined.

4. Dollop the frosting onto the  cooled cupcakes and scatter some fresh berries of your choice.
