Hedgehog Cookies
These adorable hedgehog cookies are almost too cute to eat! With a buttery, nutty flavor and a fun chocolate-dipped 'spikes' coating, they’re the perfect blend of tasty and charming. Whether you’re making them for a cozy afternoon treat or to impress guests, these little hedgehogs will bring smiles all around. Ingredients:
- 2/3 cup Cake Flour
- 3 tbsp Almond Flour
- 1/4 cup unsalted butter (softened)
- 1/4 cup icing sugar
- 1/4 tsp Salt
- 1/2 tsp Vanilla Paste
For Decoration:
- Melted Chocolate
- Chocolate Sprinkles or Chopped Nuts
- Black Candy Melt for eyes and nose
- Pink edible dust for cheeks
Instructions:
Prepare the Dough:
- In a mixing bowl, combine the softened butter and confectioners' sugar until light and creamy.
- Add the vanilla paste, and mix well.
- Sift the cake flour, almond flour, and salt into the butter mixture. Stir until just combined, forming a soft dough.
Shape the Cookies:
- Divide the dough into small, even-sized 1tbsp round balls (about 1 inch/2.5 cm in diameter) to form the hedgehog bodies. (yields 9 cookies)
- Chill the cookie dough balls in the refrigerator for 1 hour to firm up.
Bake the Cookies:
- Preheat your oven to 160°C (320°F).
- Arrange the chilled dough balls on a baking sheet lined with parchment paper, leaving some space between each cookie.
- Bake for 20-25 minutes until the cookies are lightly golden.
Add the Details:
- While the cookies are baking, use any leftover dough to shape small balls for the nose, hands, and feet.
- After the cookies have baked for 20-25 minutes, take them out of the oven and gently attach the small dough balls onto the bodies. Bake for an additional 3-4 minutes to set the attachments.
- Once done, remove the cookies from the oven and let them cool completely on a wire rack.
Decorate the Hedgehogs:
- Dip the back of each hedgehog in melted chocolate and immediately coat with chocolate sprinkles or chopped nuts, creating the appearance of spikes.
- Use the black candy melt to add eyes and a nose to each hedgehog. You can use a toothpick to help with the details.
- For a finishing touch, dab a tiny bit of pink edible dust onto the cheeks using a clean brush.
