Jammie Dodgers
The beloved British Jammie Dodgers gets a little glow-up with a delicate doily pattern, adding charm to this buttery, jam-filled classic. Ingredients:
- 150g butter, at room temperature
- 125g icing sugar
- 1 large egg
- 2 tablespoons golden syrup (or honey)
- 1tsp vanilla paste
- 450g flour
- 150g raspberry jam (or your preferred jam)
Instructions :
Using a standmixer -
1. Prepare the Dough:
- Sift the flour and set aside.
- Beat the butter until creamy, then add the icing sugar and continue mixing until fully combined.
- Add the lightly beaten egg, vanilla paste, and golden syrup, mixing until well incorporated.
- At low speed, gradually add the sifted flour and mix until just combined.
2. Roll and Chill:
- Divide the dough into two portions.
- Roll out each portion between two sheets of baking paper to approximately 0.5 cm thick.
- Refrigerate for at least two hours or freeze for 15 minutes.
3. Cut the Cookies:
- Using a round cookie cutter, cut out an even number of cookies.
- For half of the cookies, use a mini fondant cutter shapes to create a decorative cut-out. Other tools like piping tips or toothpicks can be used to create the doily effect.
- Place the cut cookies onto a lined baking tray and refreeze for 15 minutes to help maintain their shape.
4. Bake:
- Preheat the oven to 170°C
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to rest on the tray for 5 minutes before transferring to a wire rack to cool completely.
5. Assemble the Jammie Dodgers:
- Spread a small amount of jam on the plain (non-cutout) cookies.
- Gently press a decorative cutout cookie on top to create a sandwich.
- Let the jam set before serving.
