Palmiers

Fluttering with sweetness: Transform shop bought puff pastry into delightful butterfly shapes for a charming treat that's as beautiful as it is delicious!

Ingredients:

- 1 sheet of store-bought puff pastry (thawed if frozen)

- 125g cup granulated sugar

- 1 teaspoon ground cinnamon (optional)


Instructions:

1. Preheat the Oven: Preheat your oven to 180c. Line a baking sheet with parchment paper or silicone baking mat.

2. Prepare the Sugar Mixture: In a small bowl, mix together the granulated sugar and cinnamon if using. This will add a lovely flavor to your palmiers, but you can skip it if you prefer plain ones.

3. Roll Out the Puff Pastry: Sprinkle half of the sugar mixture on a clean surface and gently unfold the puff pastry sheet onto the sugar. Sprinkle the rest of the sugar mixture evenly over the puff pastry sheet,  pressing it lightly with your hands to adhere and roll it out slightly to smooth any creases and to make it a bit thinner. Make sure the sugar is adhering on both sides.

4. Fold the Edges: Starting from one long edge, carefully roll the pastry toward the center, stopping halfway. Repeat with the opposite long edge so that both sides meet in the center. Gently press the two rolls together. It looks like an ear :)

5. Chill the Pastry: Place the rolled pastry in the refrigerator for about 15-20 minutes to firm up slightly. This will make it easier to slice.

6. Slice the Palmiers: Remove the pastry from the refrigerator and, using a sharp knife, slice it into 2cm thick pieces. Make another slice in the middle but not completely cut through to the edge and then fold flat and arrange the wings. Place the slices on the prepared baking sheet, leaving some space between them as they will puff up during baking.

7. Bake: Bake the palmiers in the preheated oven for 10-12 minutes, then turn each palmier and bake for another 4-6 minutes until they are golden brown and crispy.  Keep an eye on them towards the end of the baking time to prevent them from burning.

8. Cool and Serve: Once baked, transfer the palmiers to a wire rack to cool completely. They will continue to crisp up as they cool. Serve and enjoy!
