Filling:

50g smoked salmon (chopped up finely)

100g Philadelphia cream cheese

2 tablespoon crème fraîche

1/2 small lemon juiced

1 tablespoons of capers (chopped up finely)

1 tablespoon of dill (chopped up finely)

Salt and pepper to taste

Bunch of dill for carrot tops

(Enough filling for 10-12 carrots)

Instructions:

  1. Crush up 12 pieces of aluminium foil into the shape of a cone. Approximately 4/5 inches long (enough length so you can pull out of the baked cone).

  2. Prep a baking sheet lined with parchment paper.

  3. Cut 1cm strips of puff pastry.

  4. Start wrapping strips around the cone.

  5. Generously egg wash each cone.

  6. Bake in a preheated oven 190c for 15minutes until golden.

  7. Prepare the filling and mix all the ingredients together and place in a piping bag with a large round tip.

  8. Once cones are baked and cooled you can start filling.

  9. Now garnish the tops with a few sprigs of dill to create the carrot tops

  10. Enjoy!
