Rice Krispie Pudding

These adorable Rice Krispie Christmas Puddings are a festive twist on one of my favorite childhood treats! Crispy, chewy, and covered with a drizzle of white chocolate, they're topped with cute fondant holly decorations to make them extra special for the holidays. Easy to make and fun to decorate, these little bites bring a touch of Christmas magic to the classic marshmallow cereal treat—perfect for gifting or sharing with loved ones!

Ingredients

- 200g Milk or Dark Chocolate

- 65g Unsalted Butter

- 180g Mini Marshmallows

- 125g Rice Krispies

- 50g White Chocolate

- Red & Green Fondant/Sugarpaste

Instructions

1. Melt the milk chocolate and butter in a saucepan over low heat (or microwave). Stir in marshmallows until melted and combined.

2. In a large bowl, mix the melted chocolate-marshmallow mixture with Rice Krispies until fully coated.

3. Let the mixture cool slightly, then dampen hands and roll tablespoons of it into balls. Place on a parchment-lined tray and chill in the fridge for 30 minutes.

4. Melt the white chocolate in a heatproof bowl over simmering water or microwave. Transfer to a piping bag and let cool.

5. Use the green fondant to cut out holly leaves using a cutter and use the red fondant to roll balls for small berries.

6. Drizzle chilled pudding balls with white chocolate and decorate with sugarpaste holly leaves and berries.
