Strawberry Flan
Indulge in a nostalgic treat with my Flan Sponge topped with Mascarpone Cream and Fresh Berries. Remember those pre-made fluted sponges you bought at the supermarket back in the day? This is an old-school classic updated to be prettier and yummier. The light and airy sponge base, made from just a few simple ingredients, is the ideal canvas for a luscious mascarpone cream. Topped with a medley of fresh, juicy berries, this treat not only looks stunning but tastes divine. Get creative with your berries for a unique twist each time. Follow my easy step-by-step guide to recreate this delightful dessert that's sure to impress.
Ingredients:
- For the Sponge Base:
- 3 large eggs
- 85g caster sugar
- 1.5 tablespoons water
- 1 teaspoon vanilla paste
- 85g all-purpose flour
- 3/4 teaspoon of baking powder
- For the Filling:
- 200g mascarpone cheese
- 50g icing sugar (adjust accordingly)
- 1 teaspoon vanilla paste
- 200ml whipping cream, chilled
- 200ml whipping cream, chilled
- Fresh berries (such as strawberries, blueberries, raspberries, and blackberries)
Instructions:
1. Preheat your oven to 160c.
2. Grease and flour an 11-inch round flan tin.
3. Beat together the eggs and caster sugar until very pale and thick; the mixture should double in volume.
4. Add the 1.5 tablespoons of water and the vanilla paste, then beat again.
5. Sift the flour and baking powder over the mixture and gently fold it through until fully incorporated.
6. Pour the batter into the prepared flan tin, spreading it out gently without knocking out the air.
7. Bake for 8-10 minutes, until just starting to turn golden and a toothpick comes out clean.
8. Allow to cool, then turn out onto a cake plate.
9. In a large bowl, whisk the mascarpone cheese, whipping cream, icing sugar, and vanilla paste until smooth and stiff peaks form.
12. Once the sponge base has cooled, spread the mascarpone cream evenly over the top.
