Strawberry Tiramisu Roll
This Strawberry Tiramisu Roll is the perfect fusion of classic tiramisu and fresh, fruity indulgence! Layers of coffee-soaked ladyfingers, luscious mascarpone cream, and sweet strawberries come together in a beautifully rolled dessert that’s as elegant as it is effortless. Finished with a dusting of cocoa, swirls of mascarpone, more strawberries and chocolate marshmallow roses, this no-bake treat is a showstopper for any occasion. Whether you're a tiramisu lover or simply craving a light and creamy dessert, this strawberry twist will win you over with every bite!
Ingredients:
- 20 ladyfinger biscuits
- 400g mascarpone cheese
- 5 tbsp icing sugar
- 300ml whipping cream
- 1 tbsp instant coffee granules (I like mine extra strong, so I use 1.5 tbsp) dissolve with 30ml hot water and then add 200ml milk)
- Box of fresh strawberries
- 2-3 tbsp cocoa powder, for dusting
- Dark chocolate bar, shaved and chopped into chunks for decoration or make your own roses, using marshmallow dipped in candy melts and placed on floral fondant moulds.
Instructions:
1. In a mixing bowl, beat the mascarpone cheese with a hand mixer until creamy.
2. Add icing sugar and whipping cream, then beat again until medium-stiff peaks form. Set aside.
3. In a separate bowl, dissolve the coffee granules in hot water and mix with milk and set aside.
4. Place a 40cm x 40cm parchment paper on a flat surface. Lightly dip each ladyfinger biscuit into the milky coffee and arrange them in two columns, with the long side facing you.
5. Spread about 3/4 of mascarpone cream evenly over the biscuits. Dust the top with 1 tbsp cocoa powder, covering most of the surface. Keep the remaining mascarpone cream in the fridge.
6. Dice fresh strawberries and scatter over the the top of mascarpone and cocoa.
7. Carefully roll up the cake from the long side, applying gentle pressure to avoid breaking the biscuits. Fold the sides to secure the roll, then chill for 3 hours to set.
8. Remove from the fridge, unwrap, and transfer to a cake board or plate.
9. Frost the roll with the remaining mascarpone, dust with cocoa, and pipe swirls on top. Garnish with more fresh strawberries, chocolate shavings and chunks or other decorations for the finishing touch.
