Almond Glass Cookies

Ingredients:

For the Cookie Dough:

- 50g unsalted butter (room temperature)

- 40g powdered sugar

- 1 egg

- 90g cake flour

For the Almond Caramel Filling:

- 20g unsalted butter (melted)

- 10g powdered sugar

- 30g honey

- 20g flaked almonds (slightly crushed)

Instructions:

1. Prepare the Cookie Dough:

  •  Preheat your oven to 160°C.

  •  In a mixing bowl, cream the room temperature unsalted butter and powdered sugar together until light and fluffy.

  •  Beat in the egg until well combined.

  •  Gradually add the cake flour and mix until a smooth dough forms.

  •  Transfer the dough to a disposable piping bag and snip of 3mm tip.

2. Pipe the Cookies:

  • Line a baking sheet with parchment paper. You can dip cookie shape cutters (3 to 4cm) into flour to create outline/template for easier piping.

  • Pipe the cookie dough into desired shapes, leaving a space for the filling.

  • Ensure the outlines are closed to hold the filling.

3. Prepare the Almond Caramel Filling:

  •    Combine the melted butter, powdered sugar, and honey together and mix well.

  •    Finally stir in the flaked almonds.

4. Fill the Cookies:

  • Carefully spoon the almond caramel mixture into the center of each piped cookie outline. Ensure not to overfill to avoid spilling over the edges during baking.

5. Bake the Cookies:

  • Bake in the preheated oven for 8-12 minutes, or until the cookies are lightly golden and the centers are set. Watch carefully after 8 minutes as you might be ready or rotate the pan for even baking.

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
