Ingredients:
- 240 grams all-purpose flour (plus more for rolling)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 115 grams butter, softened to room temperature
- 150 grams caster sugar
- 1 large egg (about 50 grams)
- 1 teaspoon vanilla paste
- Yellow gel food coloring, as needed
- Mini candies (like mini Smarties, M&M's, or Jelly Bellies)
- Yellow candy melts (melted to glue the daisy centers and base)
- Black candy melts for faces
- Pink luster dust for cheeks
Instructions:
1. Preheat your oven to 170°C. Line a baking sheet with parchment paper or a silicone baking mat, and another baking sheet with silicone half-sphere molds (3.8 cm).
2. In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.
3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
4. Beat in the egg and vanilla paste until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Take 1/4 of the cookie dough and add a few drops of yellow food coloring, mixing until the desired color is achieved.
7. Roll out the yellow dough and cut out circles approximately 2 inches (5.5 cm) with a cookie cutter. Place the circles onto the half-sphere molds and gently ease them around the molds.
8. Bake for 8-10 minutes, rotating the tray for even baking around 6 minutes. For a neater edge, trim the base with the same cookie cutter while the cookie is on the mold. Then bake for the final few minutes. Cool in the mold for 10 minutes before removing, then cool on a rack.
9. Roll out the remaining dough and use a daisy cookie cutter (8 cm) to cut out cookies. Lay them on the prepared baking sheet. Bake for 12-14 minutes, checking at 10 minutes to avoid browning the edges too much. Allow the cookies to cool completely on a wire rack.
10. To assemble, take a yellow cookie dome, fill it with candy, and spread a thin layer of yellow melted candy coating on the edges. Place the daisy cookie on top of the dome and flip the cookie to seal the candies inside. Repeat for all cookies. Make sure the candy melt has set before decorating further.
