Ice Cream Sandwiches

Ingredients for Cookies:
- 140g room temperature butter
- 90g icing sugar
- 1 teaspoon vanilla paste
- Pinch of salt
- 40g eggs (whole egg, whisked)
- 240g cake flour
- Gel food coloring of choice (red & coral)
Ingredients for No-Churn Ice Cream:
- 480ml cold whipping cream
- 1 can sweetened condensed milk (397g)
- 1 teaspoon vanilla paste
- 2 teaspoons Decora strawberry flavor in paste (optional)
Instructions for Cookies:
1. Preheat your oven to 150°C and place the Decorflex Duo mold on a baking sheet.
2. In a medium bowl, cream the butter and icing sugar together until smooth and creamy using a whisk.
3. Whisk in the eggs and vanilla paste until well combined.
4. Fold in the cake flour and salt with a spatula until the dough is smooth and forms a ball.
5. Divide the cookie dough, reserving 3/4 for the base biscuit color and coloring the remaining 1/4 with coral and red gel colors.
6. Place the colored dough into piping bags and pipe into the indentations of the mold.
7. Roll out the remaining cookie dough and cut out 12 rounds using a 7cm cookie cutter.
8. Place the cookie rounds into the molds and carefully press gently so the contrasting pattern sticks to the cookie base.
9. Bake for 20-25 minutes or until the edges are lightly golden brown.
10. Allow the cookies to cool in the molds for 10 minutes before transferring them to a wire rack to cool completely.
Instructions for No-Churn Ice Cream:
1. Chill the mixing bowl and beaters in the freezer for 15 minutes.
2. Beat the cold whipping cream until stiff peaks form (3-5 minutes).
3. In another bowl, combine the sweetened condensed milk and vanilla paste.
4. Gently fold the whipped cream into the condensed milk mixture until combined.
5. If using, add the strawberry flavoring paste and mix gently.
6. Place half of the ice cream mixture into a piping bag with a large round tip.
7. Pour the remaining ice cream mixture into a container, cover, and freeze for at least 4-6 hours (this is extra ice cream to enjoy later).
8. Using your Decorflex molds, assemble the ice cream sandwiches by piping the ice cream onto the cookie bases and place the matching cookie ontop.
9. Chill the assembled sandwiches in the molds for 4-6 hours.
10. Gently push out each ice cream sandwich from the molds and they are ready to serve. Enjoy!
