Cat Cookies (coconut)

Whisker away your worries with these adorable coconut cat-shaped cookies and paw print delights! Purrfectly sweet and irresistible for both the young and young-at-heart.

Ingredients:

- 50g unsalted butter, room temperature

- 45g caster sugar

- Pinch of salt

- 1 teaspoon vanilla paste

- 35g whole egg, whisked

- 65g cake flour

- 90g desiccated coconut

- Extra desiccated coconut for rolling the cookies

- Candy melts in black and pink

Instructions:

1. Preheat your oven to 150°C and line baking sheets with parchment paper.

2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.

3. Add the whisked egg and vanilla paste to the mixture. Mix until well incorporated.

4. Add the cake flour, desiccated coconut, and a pinch of salt to the bowl. Mix until a dough forms.

5. Cover the dough in cling film and chill in the refrigerator for 45 minutes.

6. Weigh out 15g of cookie dough for each cookie. Roll into balls and flatten to approximately 1.5cm thick. For cat-shaped cookies, shape the dough into an oval and add two small ears. For paw print cookies, shape the dough into a round shape. Dip each cookie in extra desiccated coconut. Place the shaped cookies on the prepared baking sheet, spacing them out. For paw prints, use the end of cutlery or a paintbrush to make indentations.

7. Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden. Turn off the oven and leave the cookies inside for an additional 10 minutes.

8. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

9. Melt the pink and black candy melts. Fill the paw print indentations with pink candy melts and use the black candy melts to add cute faces to the cat-shaped cookies.
