Wafer Cookie Rolls (aka tuile)

Rediscover a French cookie classic with a delightful twist! My patterned wafer rolls blend the timeless elegance of French pastry with a modern, eye-catching design. These treats are a feast for both the eyes and the taste buds.

Ingredients:

- 2 egg whites

- 125 g caster sugar

- 60 g plain flour

- 1 tsp vanilla paste

- 60 g butter, melted and cooled

- 3 g cocoa powder

Instructions:

1. Preheat your oven to 180°C. Line a baking sheet with preferably a silicon mat or parchment paper.

2. In a clean, dry mixing bowl, whisk the egg whites until frothy.

3. Add the caster sugar to the egg whites and combine. Then, add vanilla paste and mix well again.

4. Sift the plain flour into the egg white mixture. Fold it in using a spatula.

5. Pour the melted and cooled butter into the batter. Fold it in until well combined. The batter should be smooth and uniform. Put it into a piping bag.

6. Put 30g of the cookie batter into a small bowl and add cocoa powder. Mix well and put it in a piping bag with a small round 1 tip.

7. Pipe small portions of the batter (approximately 1 inch wide) onto the prepared baking sheet, leaving some space between each portion. Use the back of the spoon to spread the batter into thin circles approximately 7 to 8cm. Aim for a thickness of about 1-2 millimeters. I would only make 6-8 cookies per sheet. You can store the cookie batter in the fridge while waiting for the first batch to cook.

8. Start piping patterns with the cocoa batter onto the tops of the cookies. See Instagram reel for ideas.

9. Place the baking sheet in the preheated oven and bake for about 7-8 minutes, or until the edges of the rolls are golden brown and crisp.

10. Working quickly while the rolls are still warm, carefully lift each one off the baking sheet using a spatula and roll it around the handle of a wooden spoon or a similar cylindrical object. This will give them their characteristic shape. Allow them to cool and set in this shape.

11. Once cooled and set, your wafer rolls are ready to be enjoyed! Serve them as a delicate and crispy treat with tea or coffee.
