Schoko-Bon Stuffed Butter Cookies – A Sweet Way to Use Up Leftover Chocolates!
Got a stash of leftover chocolates? These buttery cookies are the perfect way to give them a delicious new life! Each one is wrapped in a soft, melt-in-your-mouth dough, hiding a surprise chocolate center. I used Kinder Schoko-Bons, but you can swap in any of your favorite filled chocolates—truffles, caramel-filled bites, or even nutty pralines. A drizzle of melted chocolate and a sprinkle of praline crumbs make them extra irresistible. Quick to make and even quicker to disappear, these cookies are a must-try!
Ingredients
- 200g unsalted butter, softened
- 125g icing sugar
- 1 tsp vanilla paste
- 400g all-purpose flour
- 1 egg
- 30 Schoko-Bon Kinder chocolates or any chocolate of your choice.
- 100g melted chocolate (for drizzling)
- praline crumbs or chopped nuts (for sprinkling)
Instructions
1. Preheat oven to 190c. Line 2 baking tray with parchment paper.
2. In a mixer bowl with paddle, cream together butter and icing sugar until light and fluffy.
3. Mix in vanilla and egg, then add flour and combine until the dough comes together. Don’t over mix.
4. Wrap dough in cling film and rest in the fridge for 1 hour.
5. Take a small portion of chilled dough approx. 20g flatten it, and wrap it around a Kinder Schoko-Bon, sealing it completely.
6. Place on the baking tray and repeat with the remaining chocolates.
7. Bake for 10-12 minutes or until lightly golden.
8. Let cool, then drizzle with melted chocolate and sprinkle with praline crumbs or nuts.
