Chocolate Tiramisu

Ingredients:

Chocolate Syrup for Dipping:

  • 250ml hot water

  • 1 ½ tablespoons unsweetened cocoa powder

  • 2 tablespoons caster sugar

Chocolate Ganache:

  • 100 g dark chocolate, coarsely chopped

  • 120 ml heavy cream

Filling:

  • 230 g mascarpone cheese, at room temperature

  • 1 teaspoon pure vanilla extract

  • 250 ml heavy cream

  • 70 g caster sugar

About 20 ladyfingers

Cocoa powder to dust

Instructions:

  1. Chocolate syrup: Mix hot water, cocoa powder, sugar together to make the chocolate syrup. Set aside.

  2. Ganache: Carefully microwave in 20-second intervals, stirring in between each interval, until melted.Set aside.

  3. Filling: Whisk mascarpone cheese and vanilla extract until creamy. In a separate bowl, whisk heavy cream and sugar until stiff peaks form. Fold whipped cream into the mascarpone mixture.

  4. Dip ladyfingers in chocolate syrup and break them into 3 to 4 pieces. Layer ladyfingers, mascarpone cream, and chocolate ganache in glasses. Dust with cocoa powder. or grated chocolate.

  6. Piping buttercream carrots around the border is optional : )

  7. Refrigerate for at least 1-2 hours before serving. Tiramisu will keep for 2 days in the fridge.
