British scones are a classic baked good that are beloved for their simplicity, versatility, and delicious taste. Made with just a handful of basic ingredients, scones are easy to make and can be customized with a wide range of flavors and ingredients to suit any taste. Perfect for a lazy Sunday morning brunch or an afternoon tea, scones are a timeless treat that will never go out of style.
Ingredients:
225g plain flour
25g caster sugar
15g baking powder
pinch of salt
50g unsalted butter, cold and cut into small pieces
150ml buttermilk
1 large egg, lightly beaten
Makes 15 scones (you can double the quantities to make a bigger batch)
Instructions:
Preheat the oven to 220°C
Mix flour, baking powder, sugar, salt and rub the cold chopped butter with your fingertips to create fine breadcrumbs.
Then add the buttermilk and mix gently with a spatula til it comes together. Do not over mix. Finish the dough by hand gently! Make sure you don’t over work the dough as it will result in tough scones.
Wrap in cling film. Rest the dough in the fridge for at least 2 hours.
Roll out the dough on a floured surface until it is 1 to 1.5cm thick.
Using a 3cm pastry cutter, cut the dough into individual scones, taking care not to twist the cutter, as this can lead to an uneven rise.
Lightly brush each scone with beaten egg.
Bake for 8-10 minutes at 220°C/425°F/gas 7.
Once baked, remove them from the oven and allow them to cool slightly before serving. Enjoy with clotted cream and jam of your choice!
We don’t always have buttermilk in our fridges so here is how you can whip up some when you need.
Buttermilk substitute:
1 tablespoon lemon juice or white vinegar
250ml milk
Mix together and let it stand for 5 minutes. Now it is ready for your recipe.
