Strawberry Heart Cookies

Love baked into every bite. These buttery sugar cookies topped with heart-shaped strawberry slices are almost too pretty to eat! I couldn’t resist not posting these before Valentine’s, this is the perfect cookie to add a little love to your day.

Ingredients:

 

- 200g cake flour

- 1g baking powder

- 1/4 tsp salt

- 75 g unsalted butter, softened

- 75 g icing sugar

- 30g whole egg (whisked and measured)

- 1 tsp vanilla paste

- Fresh strawberries

- Fresh thyme (optional)

- sugar for sprinkling

 

Instructions:

1. Wash and hull the strawberries. Slice them thinly, and shape each slice into a heart and lay on a few sheets of kitchen towel. Sprinkle sugar on the strawberries and let them sit for 15 minutes.

 2. Preheat your oven to 150°C and line a baking sheet with parchment paper.

 3. In another bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla.

 4. In a bowl, whisk together flour, baking powder, and salt. Gradually mix in the dry ingredients into the wet ingredients. The dough should just come together, making sure there is no traces of flour.

5. Roll the dough between 2 sheets of parchment paper to about 5mm thickness, and chill for 30 minutes.

 6. Using a 4.5 cm scalloped round cookie cutter, cut out the dough and place the cookies on the prepared baking sheet, about 2.5 cm apart.

7. Press gently a few sheets of kitchen towel over the sliced strawberries to take off the excess juices.

 8. Top each cookie with a heart-shaped strawberry slice. Optionally add thyme stalks to create cute heart flower. You can add some patterns to the scallop edges using a wooden skewer.

9. Bake for 18-20minutes, until the edges are just starting to turn golden. Let them cool on the sheet for 2 minutes, then transfer to a wire rack.
