Instructions:
1. Prepare the Gelatine:
- Soak the gelatine sheets in cold water for about 5-10 minutes until they soften.
- Squeeze out the excess water, place the gelatine in a small bowl, and microwave for 10 seconds to melt.
2. Make the Vanilla Mousse:
- In a large bowl, beat the softened cream cheese, sour cream, sugar, vanilla paste, and pink gel food coloring until smooth and creamy. (If using strawberry aroma paste, add it here.)
- Stir the cooled gelatine mixture into the cream cheese mixture and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pink mixture until fully incorporated.
- Transfer the mousse mixture into a piping bag.
3. Assemble the Mousse:
- Pipe the mousse mixture into each sphere silicone mold (6.5cm width) cavity, filling them almost to the top.
- Tap the mold gently on the counter to remove any air bubbles.
- Refrigerate for at least 4 hours or until the mousse is fully set.
4. Decorate:
- Once set, carefully remove the mousse from the silicone molds.
- Place each mousse on top of a digestive biscuit.
