Strawberry Horns

This recipe takes your dessert game to the next level with a creative twist—no need to buy metal molds! Instead, I have used something you likely already have at home: ice cream cones. By wrapping them in aluminum foil, you create perfect, fuss-free molds for the puff pastry horns. These sweet treats are not only visually stunning but also incredibly easy to make, offering a burst of fresh flavors and a crispy, sugary pastry shell. Whether you’re hosting a party or treating yourself, these puff pastry horns are sure to impress!
Ingredients:
- 1 sheet of store-bought puff pastry
- 1 large egg mixed with 1 tablespoon of milk (for egg wash)
- 30g granulated sugar
- 150g mascarpone cheese
- 50g icing sugar
- 1 tsp vanilla paste
- 150ml heavy cream
- fresh strawberries, halves
- strawberry jam
Tools:
- Ice cream cones
- Aluminum foil
- 1M star tip
Yields 6-8 horns
Instructions:
1. Prepare the Moulds:
- Wrap each ice cream cone tightly in aluminum foil, creating a smooth surface. These will be your molds for the puff pastry horns.
2. Prepare the Puff Pastry:
- Preheat your oven to 180°C and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface and cut it into long, thin strips (about 2.5 cm wide).
3. Wrap the Cones:
- Starting at the pointed end of the foil-wrapped cone, wrap a strip of puff pastry around the cone, slightly overlapping each layer as you go.
4. Apply the Egg Wash:
- Brush the wrapped pastry with a light coating of egg wash and roll it in granulated sugar.
5. Bake the Pastry Horns:
- Place the pastry-wrapped cones on the prepared baking sheet, seam side down.
- Bake for 15-20 minutes, or until the pastry is golden brown and puffed.
- Remove from the oven and let cool completely before carefully removing the foil-covered cones.
6. Prepare the Mascarpone Filling:
- In a mixing bowl, combine the heavy cream, mascarpone cheese, icing sugar, and vanilla and whip to stiff peaks. Fill cream in a piping bag with 1M star tip.
7. Assemble the Horns:
- Pipe or spoon the mascarpone cream into the horns until filled.
- Pipe strawberry jam in the centre of the cream.
- Add a few slices of fresh strawberries into each filled horn.
8. Serve:
- Enjoy your delicious puff pastry horns filled with mascarpone cream, strawberries, and jam!
